These Healthy Breakfast Cookies are a delicious and nutritious way to start your day. Made with peanut butter, ripe bananas, oats, and a touch of honey, they are packed with wholesome ingredients that provide energy and satisfy your morning hunger. Perfect as a grab-and-go breakfast or a mid-morning snack, these cookies are naturally sweetened, gluten-free, and loaded with fiber and protein to keep you full longer.

Ingredients

Wet Ingredients

  • 1 cup creamy peanut butter (or other nut butter)
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 medium ripe bananas, mashed

Dry Ingredients

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 1/4 cups quick oats
  • 1/2 cup dried cranberries or raisins
  • 2/3 cup chopped nuts, such as almonds, walnuts or pistachios

Instructions

  1. Preheat the oven: Set your oven to 325°F (165°C) and line a baking sheet with parchment paper or a Silpat to prepare for baking the cookies.
  2. Mix wet ingredients: In the bowl of a stand mixer fitted with the paddle attachment, beat together peanut butter, honey, vanilla extract, mashed bananas, salt, and ground cinnamon until smooth and fully combined.
  3. Add dry ingredients: Stir in the quick oats, dried cranberries or raisins, and chopped nuts. Mix until the ingredients are evenly distributed throughout the dough.
  4. Form cookies: Scoop about 1/4-cup mounds of cookie dough onto the prepared baking sheet. Flatten each cookie slightly with the back of the spoon or your fingers since they won't spread during baking. Place them relatively close together as there is minimal spreading.
  5. Bake: Place the baking sheet in the preheated oven and bake for 14 to 16 minutes, or until the cookies turn golden brown but remain soft to the touch.
  6. Cool: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes to set before transferring to a wire rack to cool completely. This helps them firm up without breaking.

Notes

  • You can substitute peanut butter with any other nut or seed butter of your choice, such as almond or sunflower seed butter.
  • For additional sweetness, consider adding a few tablespoons of maple syrup or agave instead of honey.
  • Make sure bananas are ripe for natural sweetness and smooth texture.
  • Store cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
  • Use quick oats as they blend better and give a softer cookie texture; old-fashioned oats may result in a chewier cookie.
