Ingredients

The Muffins

  • 1 ripe banana (the riper, the better)
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • ¼ cup vanilla yogurt (any yogurt will work)
  • ⅓ cup peeled and grated carrot (approximately 1 small carrot)
  • ⅓ cup oat flour
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon

The Frosting

  • ⅓ cup softened cream cheese
  • 2 teaspoons maple syrup (to taste)
  • 1 dash cinnamon (to taste)
  • Crushed walnuts (optional, for topping or batter)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the muffins.
  2. Mash Banana and Mix Wet Ingredients: In a mixing bowl, mash the ripe banana thoroughly, then add the egg, vanilla extract, and vanilla yogurt. Mix well until fully combined.
  3. Add Grated Carrot: Fold in the peeled and grated carrot to the wet mixture and stir to incorporate.
  4. Combine Dry Ingredients: In a separate bowl, mix the oat flour, baking powder, and cinnamon. Then, add these dry ingredients to the wet mixture and mix until the batter is uniform.
  5. Prepare Muffin Tin: Line a muffin tin with parchment paper cupcake liners and scoop the batter evenly into four muffin slots.
  6. Bake Muffins: Place the muffin tin in the preheated oven and bake for 17 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Make Frosting: While the muffins bake, combine softened cream cheese, maple syrup, and a dash of cinnamon in a bowl. Mix until the frosting is silky smooth.
  8. Frost and Garnish: Once muffins have cooled slightly, spread the cream cheese frosting evenly on top. Sprinkle crushed walnuts on top if desired, and serve.

Notes

  • Muffin texture may vary depending on the size of the banana; using a very ripe banana ensures better moisture and sweetness.
  • You can replace vanilla yogurt with any flavor or plain yogurt according to preference.
  • The crushed walnuts are optional; you may also add them into the batter for added crunch.
  • Ensure muffins cool before frosting to prevent melting the cream cheese icing.
  • These muffins can be stored in an airtight container in the refrigerator for up to 3 days.
