A delicious and nutritious high-protein omelet packed with fresh vegetables and cheddar cheese, perfect for a quick and healthy breakfast or snack.

Ingredients

Egg Mixture

  • 1 large egg
  • ½ cup egg whites
  • ¼ teaspoon kosher salt
  • Black pepper, to taste

Vegetables

  • 2 tablespoons fresh spinach, chopped
  • 2 tablespoons red bell pepper, chopped
  • 1 tablespoon red onions or scallions, chopped

Other

  • Olive oil spray
  • ⅓ cup cheddar cheese, shredded (or cheese of your choice)

Instructions

  1. Prepare the egg mixture: Lightly beat the large egg and egg whites together in a small bowl using a fork. Add the chopped spinach, red bell pepper, and red onions or scallions. Season with kosher salt and black pepper, then mix well to combine all ingredients evenly.
  2. Heat the skillet: Place a 9 or 10-inch nonstick skillet over medium-low heat. Once hot, spray the skillet lightly with olive oil spray to prevent sticking.
  3. Cook the omelet base: Pour the egg mixture into the skillet and let it sit undisturbed for a few moments to start cooking. Use a heatproof silicone or rubber spatula to gently lift the edges of the cooked eggs from the pan, allowing the uncooked egg to flow to the edges and cook evenly.
  4. Add cheese and fold: When the eggs are mostly set, sprinkle the shredded cheddar cheese along the center of the omelet. Let it melt for a few seconds, then use the spatula to carefully fold the edges of the omelet over the cheese on both sides, creating a neat fold in the center.
  5. Serve immediately: Gently slide the folded omelet onto a plate and serve hot. Enjoy your high-protein, vegetable-packed omelet!

Notes

  • Use a nonstick skillet to ensure easy cooking and folding.
  • You can substitute cheddar cheese with any cheese you prefer.
  • Adjust the vegetables according to your taste or what you have available.
  • Cooking on medium-low heat ensures the eggs cook gently and evenly without burning.
  • Add herbs or spices like chives or paprika for extra flavor if desired.
