This High-Protein Spinach Avocado Egg Wrap is a quick, nutritious breakfast option combining fresh spinach, protein-rich eggs, creamy avocado, and a whole-grain tortilla. Ready in just 5 minutes, it’s a perfect balanced meal to start your day energized and satisfied.

Ingredients

Vegetables

  • 1 cup spinach leaves (1 large handful)
  • ½ avocado (sliced or mashed)

Protein and Wrap

  • 2 large eggs (lightly beaten)
  • 1 whole-grain tortilla (~8-inch)

Seasonings

  • Pinch salt and pepper
  • Extra seasonings and hot sauce (optional)
  • Oil spray for cooking

Instructions

  1. Prepare the skillet and cook spinach: Liberally mist a 10-inch skillet with oil spray and warm it over medium heat. Add the spinach leaves and cook until they wilt, about 2 minutes. Evenly distribute the cooked spinach across the bottom of the pan.
  2. Add eggs over spinach: Pour the lightly beaten eggs over the cooked spinach. Tilt the pan to spread the eggs evenly, covering the entire bottom. Sprinkle a pinch of salt and pepper, and any additional herbs or seasonings if using.
  3. Place tortilla and cook eggs: While the eggs are still wet, place the whole-grain tortilla on top. Allow the eggs to cook and firm underneath the tortilla for about 2 minutes.
  4. Flip and add avocado: Once the eggs have set, use a wide spatula to carefully flip the tortilla. Place the mashed or sliced avocado on one half of the tortilla, then fold the tortilla in half and gently press with the spatula to set the wrap.
  5. Serve: Transfer the wrap to a plate, slice it in half if desired, and enjoy your high-protein spinach avocado egg wrap immediately.

Notes

  • You can customize the wrap with your favorite herbs or hot sauce for extra flavor.
  • Use a non-stick skillet or well-oiled pan to prevent sticking when cooking eggs and tortilla.
  • For a vegan alternative, substitute eggs with a chickpea flour batter and omit avocado if desired.
  • This recipe is ideal for a quick breakfast or a light, healthy lunch.
  • Whole-grain tortilla adds fiber and extra nutrients compared to refined flour tortillas.
