This Homemade Cheez-Its recipe recreates the beloved classic snack with a deep, nutty, and grilled cheese flavor. Made from scratch using sharp cheddar and a tender dough, these crispy, golden crackers are perfect for snacking or entertaining.

Ingredients

For the Dough:

  • 6 3/4 ounces all-purpose flour (1 1/3 cups; 190 g), plus more for dusting
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1 1/2 teaspoons (6 g) Diamond Crystal kosher salt (for table salt, use half as much by volume or same weight)
  • 1 (8-ounce; 227 g) block sharp yellow cheddar cheese, grated finely
  • 8 ounces heavy cream (1 cup; 225 g)

For the Egg Wash:

  • 1 large egg
  • 1 large egg yolk
  • 1/2 ounce water (1 tablespoon; 15 g)
  • 1/4 teaspoon (1 g) Diamond Crystal kosher salt, plus more for sprinkling

Instructions

  1. Prepare the Dough: Adjust your oven rack to the middle position and preheat the oven to 375°F (190°C). In a medium bowl, whisk together the all-purpose flour, baking powder, sugar, and kosher salt until evenly combined. Toss the finely grated sharp cheddar cheese into the dry ingredients, ensuring it is well distributed.
  2. Mix the Dough: Stir in the heavy cream with a flexible spatula until the dough begins to come together. Transfer the dough onto a lightly floured surface and knead it until it becomes pliable and smooth.
  3. Roll and Cut: Divide the dough in half. Roll out each portion on a lightly floured surface into a roughly 15- by 11-inch rectangle, keeping the thickness no more than 1/8 inch. Transfer each rectangle onto a parchment-lined half sheet pan. Using a fluted pastry wheel, cut the dough into 1-inch squares.
  4. Prepare Egg Wash: In a small bowl, whisk together the large egg, egg yolk, water, and kosher salt until well combined.
  5. Apply Egg Wash and Add Details: Brush the egg wash evenly over the prepared dough squares. Sprinkle additional salt to taste over the top. For the classic Cheez-It appearance, press a small indentation in the center of each square using a bamboo skewer or chopstick, though this step is optional.
  6. Bake: Place the sheet pans in the preheated oven and bake for about 24 minutes or until the crackers turn golden brown and crisp.
  7. Cool and Store: Remove from oven and allow the Cheez-Its to cool to room temperature. Enjoy immediately or store in an airtight container at room temperature for up to 1 month.

Notes

  • Use sharp yellow cheddar for the best flavor and color. Finely grating the cheese helps it distribute evenly in the dough.
  • Adjust salt according to your taste preference, especially if using table salt instead of kosher salt.
  • Rolling the dough thin (no more than 1/8 inch) ensures crispy, perfectly baked crackers.
  • The indentation in the center of each cracker is optional but gives a classic Cheez-It look.
  • Store baked crackers in an airtight container to maintain freshness and crispness.
