This Homemade French Bread recipe guides you through the process of making crusty, golden-brown French bread right at home. Using simple ingredients such as flour, yeast, water, and salt, this recipe delivers a delightful loaf with a chewy interior and a perfectly crisp crust, ideal for sandwiches or as a side to any meal.

Ingredients

Dough Ingredients

  • 2 cups warm water (about 105°F)
  • 1 tablespoon active dry yeast
  • 2 1/2 teaspoons granulated sugar
  • 5 cups (650 g) all-purpose flour or bread flour (add more as needed)
  • 2 1/2 teaspoons table salt or fine sea salt
  • 1 teaspoon olive oil

Optional

  • Melted salted butter for brushing

Instructions

  1. Combine Yeast Mixture: In a small bowl, combine the warm water, active dry yeast, and sugar. Let the mixture sit for about 5 minutes until it begins to foam, indicating the yeast is active.
  2. Knead Dough: In a stand mixer fitted with a paddle attachment or a large mixing bowl, mix 2 cups of flour and salt. Gradually stir in the yeast mixture on medium-low speed or by hand. Knead in an additional 1/2 cup of the remaining flour in increments until the dough becomes smooth but not sticky. Depending on humidity and flour type, you may need to add more flour until the desired consistency is achieved.
  3. Rest Dough: Rub olive oil over the dough ball, cover the bowl with a clean towel, and let it rest for 15 to 30 minutes. If possible, allow it to rise for up to 1 hour for enhanced flavor and texture.
  4. Roll Dough: Turn the dough onto a well-floured surface and divide it in half. Set one half aside. Roll the other half into a rectangle approximately 15 inches long. Starting from the long side, roll the dough tightly into a cylinder shape.
  5. Rise Loaves: Tuck the ends of each dough roll in and pinch the seams closed. Round the edges and place the loaves onto a baking sheet lined with a silicone mat or parchment paper. Repeat the rolling process with the second dough half. Make three diagonal slashes across the top of each loaf. Cover the loaves lightly with a towel and let rise for 30 to 60 minutes; the longer rise will improve the bread’s texture and volume.
  6. Bake Bread: Preheat the oven to 400°F (200°C). Bake the loaves for 17 to 23 minutes or until the tops are golden brown and the bread sounds hollow when tapped. If the bread browns too quickly, cover lightly with foil and reduce the oven temperature to 375°F (190°C).
  7. Serve: Optionally brush the hot bread with melted salted butter for added flavor and a soft crust. Slice and serve warm for the best taste experience.

Notes

  • Ensure water temperature is around 105°F to properly activate the yeast without killing it.
  • Kneading by hand may require extra flour and time to achieve a smooth dough.
  • For a crustier loaf, spritz water in the oven or place a pan with water during baking to create steam.
  • Baking times may vary depending on your oven; keep an eye on the crust color and hollow sound for doneness.
  • Leftover bread can be stored in an airtight container or frozen for up to 3 months.
