These Ice Cube Tray Peanut Butter Cups are a quick and easy homemade treat combining silky chocolate with creamy peanut butter. Made with simple ingredients and set in an ice cube tray, they’re the perfect bite-sized snack to satisfy your sweet tooth without the mess. Whether you prefer classic peanut butter or any nut or seed butter of your choice, these cups are versatile and customizable with optional sweetener and coconut oil for extra smoothness.

Ingredients

Chocolate Layer

  • 2/3 cup chocolate chips (or chopped chocolate)
  • 2 tsp coconut oil (optional, for a smoother sauce)

Nut Butter Filling

  • 1/3 cup peanut butter (or nut or seed butter of choice)
  • 2 tsp sweetener of choice (optional)

Instructions

  1. Prepare your supplies. Grease an ice cube tray lightly to prevent sticking, then set it aside ready for filling.
  2. Melt the chocolate. Carefully melt the chocolate chips (and coconut oil if using) in a microwave or double boiler until smooth and glossy.
  3. Base layer of chocolate. Pour about one-third of the melted chocolate evenly into the bottom of each section in the ice cube tray.
  4. Prepare the nut butter filling. In a small bowl, mix together the peanut butter and sweetener if using until well combined and smooth.
  5. Assemble the cups. Spoon the nut butter mixture evenly into the center of each chocolate-filled mold, making sure it is surrounded by chocolate.
  6. Top with remaining chocolate. Cover the nut butter filling with the remaining melted chocolate, ensuring each cup is fully covered.
  7. Freeze to set. Place the tray in the freezer and let the cups freeze completely until firm and set, about 1-2 hours.
  8. Remove and store. Run a knife gently around the edges if needed, then pop out the peanut butter cups. These can be stored in the refrigerator or freezer, or left at room temperature for a few hours before enjoying.

Notes

  • You can substitute peanut butter with any other nut or seed butter according to preference or dietary needs.
  • Sweetener is optional depending on how sweet you want your cups; options include sugar, honey, maple syrup, or low-calorie sweeteners.
  • Adding coconut oil helps create a smoother texture and easier melting chocolate.
  • These treats are best kept refrigerated or frozen for a firmer consistency, especially in warmer climates.
  • Feel free to double or triple the recipe to make larger batches.
