Fadge, also known as Irish Potato Bread, is a traditional Irish recipe that transforms simple mashed potatoes into soft, golden, saucer-sized rounds. Perfectly tender and lightly crisp on the outside, this comforting bread is quick to prepare and bake, making it an ideal accompaniment to any meal or a delicious snack on its own.

Ingredients

Potato Bread Ingredients

  • 1 pound (500 grams) potatoes, cooked and mashed or leftover mashed potatoes
  • 2 tablespoons (30 grams) unsalted butter, melted, plus a little extra for greasing
  • 1/2 teaspoon salt
  • 1 medium egg
  • 4 ounces (115 grams) all-purpose flour, plus a little extra for rolling out
  • 1 teaspoon baking powder

Instructions

  1. Gather Ingredients: Collect all the necessary ingredients so everything is ready at hand, ensuring a smooth cooking process.
  2. Preheat Oven and Mix Dough: Preheat your oven to 400°F (205°C, Gas 6). In a large baking bowl, place the mashed potatoes and add melted butter, salt, egg, flour, and baking powder. Mix thoroughly to form a light but sticky dough.
  3. Prepare Work Surface: Generously flour your work surface to prevent the dough from sticking when rolling out.
  4. Roll Dough: Roll the dough out on the floured surface to approximately ½ inch (1 centimeter) thickness, creating a flat sheet ready for cutting.
  5. Cut Rounds: Using a knife, cut the dough into saucer-sized rounds. Score each round with a cross on top to create four equal wedges. Alternatively, use a round biscuit or scone cutter to make individual cakes in your preferred size.
  6. Prepare Baking Sheet: Grease a baking sheet generously with butter. Carefully transfer the dough rounds onto the baking sheet using a spatula, handling gently as the dough is soft.
  7. Bake: Place the baking sheet in the center of the preheated oven and bake the rounds for 15 minutes or until they turn golden brown and have risen nicely.
  8. Cool and Serve: Once baked, transfer the rounds to a cooling rack and let them cool slightly. Serve them warm for the best taste and texture.

Notes

  • Heavily flouring the work surface prevents the sticky dough from adhering and makes rolling easier.
  • Use leftover mashed potatoes for convenience and flavor; just ensure they are smooth and well-prepared.
  • Eat the fadges while freshly cooked and warm for the best taste experience.
  • The size of the rounds can be customized using different cutters depending on your preference.
  • Butter greasing on the baking sheet helps the fadges develop a golden crust and prevents sticking.
