Jason's Deli Broccoli Cheese Soup is a creamy, comforting soup featuring tender broccoli and rich American cheese. This easy stovetop recipe blends savory spices and a velvety half-and-half base to create a deliciously thick and flavorful soup perfect for a cozy meal.

Ingredients

Vegetables & Seasonings

  • 32 ounces frozen broccoli
  • 1/2 teaspoon salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon chicken bouillon
  • 1/8 teaspoon turmeric

Liquids

  • 3 1/2 cups water (divided use)
  • 1 1/2 cups half-and-half

Thickening Agent & Cheese

  • 1/4 cup cornstarch
  • 12 ounces American cheese (use American cheese from the deli, not Velveeta)

Instructions

  1. Cook Broccoli: Place the frozen broccoli, salt, and 1 cup of water in a large pot over medium heat. Cover and cook for about 10 minutes, stirring occasionally, until the broccoli is tender and bright green. If the broccoli is large, break it into smaller pieces. Drain and set aside.
  2. Prepare Soup Base: In the same pot over medium-high heat, combine the half-and-half, chicken bouillon, turmeric, onion powder, ground black pepper, and 1 1/2 cups of water. Stir well to blend the flavors.
  3. Make Cornstarch Slurry: Whisk the cornstarch with 1 cup of water until smooth. Pour this slurry into the soup base and bring to a boil, stirring constantly until the mixture thickens. Reduce heat to a simmer.
  4. Melt Cheese and Combine: Add the American cheese to the soup, stirring occasionally until fully melted and creamy. Then add the cooked broccoli back into the pot and simmer for 10 to 15 minutes, stirring occasionally to blend flavors. Taste and adjust seasoning with additional salt if needed.

Notes

  • Use American cheese from the deli for the best texture and taste; Velveeta is not recommended.
  • Stir constantly when adding the cornstarch slurry to prevent lumps and ensure even thickening.
  • If you prefer a smoother texture, you can lightly mash or blend some of the broccoli before adding back to the soup.
  • Adjust the seasoning at the end to suit your taste preference.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated gently on the stovetop.
