This Keto Panna Cotta is a creamy, low-carb dessert perfect for those following a ketogenic diet. Made with heavy cream, a sugar substitute, and gelatin, this panna cotta sets into a silky and smooth custard-like treat that's easy to prepare and can be flavored with vanilla or your choice of extracts.

Ingredients

Liquid Ingredients

  • 1 1/2 cup heavy cream (or full-fat coconut milk)
  • 3/4 cup milk of choice
  • 1 teaspoon vanilla extract (optional)

Dry Ingredients

  • 4 tablespoons sugar substitute (adjust to taste)
  • 2 teaspoons unflavored gelatin powder

Instructions

  1. Combine Ingredients: Add 1 1/2 cup heavy cream, 3/4 cup milk of choice, and 4 tablespoons sugar substitute to a saucepan. Evenly sprinkle 2 teaspoons unflavored gelatin powder on top and let it stand for 2 minutes to bloom the gelatin.
  2. Heat Mixture: Heat the mixture to a gentle simmer over medium heat while stirring constantly until the gelatin and sweetener are fully dissolved and the mixture becomes smooth. Avoid boiling to maintain creaminess.
  3. Add Flavoring: Remove the saucepan from heat and stir in 1 teaspoon vanilla extract or your choice of flavoring to enhance the dessert’s aroma and taste.
  4. Set the Panna Cotta: Pour the mixture evenly into ramekins or dessert cups. Allow them to cool slightly at room temperature before refrigerating.
  5. Refrigerate Until Set: Place the panna cotta in the refrigerator for about 2 to 3 hours to set sufficiently for eating directly from the glass. For firmer texture suitable for unmolding, refrigerate for at least 6 hours or overnight.

Notes

  • You can substitute heavy cream with full-fat coconut milk for a dairy-free version.
  • Adjust the amount of sugar substitute based on your preferred level of sweetness.
  • Be careful not to boil the mixture as it can affect the gelatin’s setting ability and the cream’s texture.
  • If unmolding, run a thin knife around the edges and dip the ramekin briefly in warm water to release the panna cotta easily.
  • Try adding other flavor extracts such as almond or rose for a different twist.
