Lebanese Green Beans are a comforting and flavorful stew made with tender green beans simmered in a blend of aromatic spices, garlic, onions, and diced tomatoes. This classic Middle Eastern dish is perfect as a hearty side or main when served over rice or quinoa, served with pita bread and yogurt for a complete meal.

Ingredients

Vegetables and Aromatics

  • 3 tablespoons olive oil
  • 1/2 medium sweet onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 pound green beans, fresh or frozen

Spices and Seasonings

  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Other Ingredients

  • 1 (14.5 ounces) can diced tomatoes with juices

Instructions

  1. Sauté the aromatics: Heat the olive oil in a large sauté pan over medium-high heat. Add the thinly sliced onion and cook for 3-4 minutes until softened. Add the minced garlic and continue to sauté for an additional 2 minutes until fragrant.
  2. Add green beans and spices: Incorporate the green beans along with cumin, paprika, and cinnamon into the pan. Pour in the diced tomatoes with their juices and stir well to combine.
  3. Simmer until tender: Bring the mixture to a boil, then cover the pan and reduce heat to low. Let it simmer gently for 40-45 minutes, stirring occasionally, until the green beans are tender and cooked through. Season with salt and pepper to taste.
  4. Serve: Serve warm, ideally over rice or quinoa, accompanied by pita bread and yogurt for a traditional touch.

Notes

  • Use fresh or frozen green beans based on availability; frozen green beans may reduce the simmer time slightly.
  • You can add meat such as lamb or beef by sautéing it with the garlic for an additional 4 minutes as noted in the recipe.
  • Adjust seasoning according to your taste preference.
  • This dish pairs beautifully with a side of plain yogurt or a cucumber yogurt salad for added freshness.
