Mediterranean Fish Bake is a simple and flavorful dish featuring flaky white fish like cod or halibut baked with juicy cherry tomatoes, briny olives, fresh herbs, and a zesty lemon-infused olive oil. This wholesome bake offers a light yet satisfying meal perfect for any occasion.

Ingredients

Fish and Seasoning

  • 1 ½ lb white fish fillet such as cod or halibut (1 to 1 ½ inches thickness)
  • Kosher salt and ground black pepper, to taste
  • Extra virgin olive oil, for brushing and drizzling
  • 1 lemon

Vegetable and Herb Mixture

  • 8 ounces cherry tomatoes, halved
  • 3 ounces pitted olives, halved (combination of kalamata and green olives recommended)
  • 1 shallot, minced
  • 4 to 5 garlic cloves, minced
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons dried oregano

Instructions

  1. Preheat Oven: Heat the oven to 400 degrees F (200 degrees C) to prepare for baking the fish and vegetable mixture.
  2. Prepare Fish: Pat the fish dry using paper towels and season both sides with kosher salt and ground black pepper. Brush a 9 ½ x 13-inch baking dish with extra virgin olive oil and add half of the halved cherry tomatoes to the dish, spreading them evenly. Place the seasoned fish on top of the tomatoes. Squeeze juice from half of the lemon evenly over the fish.
  3. Make Tomato and Olive Mixture: In a medium mixing bowl, combine the remaining cherry tomatoes, halved olives, minced shallot, minced garlic, fresh thyme leaves, and dried oregano. Season with a very small pinch of salt and ground black pepper, then add about 3 tablespoons of extra virgin olive oil. Toss everything together gently to mix well.
  4. Bake: Pour the tomato and olive mixture evenly over the fish in the baking dish. Place the dish in the preheated oven and bake for 15 to 20 minutes. The exact time depends on the thickness of your fish; cook until the fish is opaque and flakes easily with a fork.
  5. Finish and Serve: Remove the baking dish from the oven and immediately squeeze the remaining half of the lemon over the fish and vegetables. Serve warm, enjoying the fresh Mediterranean flavors.

  • Kalamata and green olives provide a nice balance of briny flavors but feel free to use your preferred olives.
  • Serve with crusty bread or a light salad for a complete meal.
