Ingredients

Meat and Aromatics

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 tbsp minced garlic

Seasonings

  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp ground mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Condiments and Liquids

  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 2 tbsp dill pickle juice
  • 1 1/2 cups beef broth
  • 8 oz can tomato sauce

Carbs and Cheese

  • 1 cup jasmine rice, rinsed
  • 1 1/2 cups shredded Colby Jack cheese

Garnish

  • 2 green onions, chopped

Instructions

  1. Brown the Beef and Onion: Heat a large skillet over medium-high heat. Add 1 lb ground beef and chopped onion. Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika. Cook until the beef is browned and the onions are soft. Drain any excess grease.
  2. Add Garlic and Condiments: Stir in minced garlic, ketchup, mustard, and dill pickle juice until well combined with the meat mixture.
  3. Add Rice, Broth, and Tomato Sauce: Pour in the rinsed jasmine rice, beef broth, and the tomato sauce. Stir everything together thoroughly to combine all ingredients evenly in the skillet.
  4. Cook the Rice: Bring the mixture to a quick boil. Then reduce heat to medium-low, cover the skillet with a lid, and simmer for 15-20 minutes until the rice is fully cooked and has absorbed most of the liquid.
  5. Incorporate the Cheese: Once the rice is cooked, sprinkle about 1 cup of shredded Colby Jack cheese over the mixture, stir it in, then top with the remaining cheese. Let it sit until the cheese melts thoroughly. Optionally, place the skillet under the oven broiler for a minute to melt and lightly brown the cheese.
  6. Garnish and Serve: Sprinkle chopped green onions on top for a fresh finish. Serve hot and enjoy your cheesy, comforting one-pan meal.

Notes

  • Rinsing the rice before cooking removes excess starch for a fluffier texture.
  • Drain excess fat after browning the ground beef to avoid greasy rice.
  • For extra cheesiness, feel free to increase the amount of cheese.
  • You can customize the seasoning to taste by adding more or less smoked paprika or mustard powder.
  • If you don't have dill pickle juice, a splash of vinegar or lemon juice can be a substitute to add tangy flavor.
  • Using a heavy-bottomed skillet helps prevent sticking and promotes even cooking.
  • Broiling the final dish for a minute is optional but adds a nice cheesy crust.
