Ingredients

Main Ingredients

  • 2 cups long grain white rice
  • 1 cup plain tomato sauce
  • 1 medium white or yellow onion, chopped small
  • 6 cloves garlic, minced
  • 1/2 large red bell pepper, very finely chopped
  • 3 tablespoons olive oil
  • 2 ½ cups vegetable broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ to 1 teaspoon cumin
  • 1/4 cup chopped cilantro
  • Juice from 1 lime

Optional Ingredient

  • 1 jalapeno pepper, diced

Instructions

  1. Chop Onion: Finely chop the onion into small pieces using a knife or an onion press to ensure even, tiny chunks that cook uniformly.
  2. Sauté Onion: Heat the olive oil in a large pot over low heat. Add the chopped onion and sauté for 3-5 minutes until it becomes translucent and fragrant.
  3. Add Garlic and Vegetables: Add minced garlic, finely chopped red bell pepper, and diced jalapeno (if using) to the pot. Continue sautéing for 2-3 more minutes to soften and release flavors.
  4. Add Remaining Ingredients: Pour in the long grain white rice, plain tomato sauce, vegetable broth, chili powder, dried oregano, salt, and cumin. Stir to combine all ingredients evenly but leave out the cilantro and lime juice for now.
  5. Bring to Low Boil: Increase the heat to bring the mixture to a low boil. Once boiling, cover the pot with a lid and reduce heat to low to prevent the liquid from absorbing too quickly, ensuring the rice cooks properly.
  6. Simmer: Let the rice simmer gently for 15-20 minutes, stirring halfway through to prevent sticking and ensure even cooking. Cook until all the liquid has been absorbed and the rice is tender.
  7. Cover and Rest: Turn off the heat and keep the pot covered. Let it rest for 10 minutes to allow the rice to finish cooking and steam perfectly.
  8. Fluff and Serve: Remove the lid and fluff the rice with a fork. Stir in the chopped cilantro and lime juice for a fresh, tangy finish. Serve warm as a delicious vegan Mexican side or main dish.

Notes

  • Using an onion press helps get evenly small pieces for better texture.
  • If you prefer less heat, omit the jalapeno or remove seeds before adding.
  • Be sure to keep the heat low when simmering to avoid undercooked rice.
  • Resting the rice covered after cooking enhances its fluffiness.
  • This dish can be paired with beans or vegan proteins for a complete meal.
