This Oven Roasted Zucchini recipe offers a simple and flavorful way to prepare zucchini chunks infused with a blend of herbs, spices, and Parmesan cheese. Roasting in the oven develops a tender texture with a slightly crispy, cheesy finish under the broiler. It's a perfect easy side dish to complement any meal, ready in under 25 minutes.

Ingredients

Zucchini and Seasoning

  • 3 medium zucchini, cut in half lengthwise and then into 1-inch chunks
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried thyme
  • ½ teaspoon crushed rosemary

Topping

  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper that can handle high heat, or place zucchini directly on the baking sheet if unsure.
  2. Prepare the Zucchini: Place the chopped zucchini in a large bowl and toss with olive oil until evenly coated. Sprinkle sea salt, black pepper, garlic powder, onion powder, dried marjoram, dried thyme, and crushed rosemary over the zucchini and toss again so all pieces are well-seasoned.
  3. Arrange and Roast: Spread the seasoned zucchini pieces in a single layer on the prepared baking sheet to ensure even roasting. Place the baking sheet in the oven and roast for 10 minutes.
  4. Flip and Continue Roasting: After 10 minutes, carefully flip the zucchini pieces to promote even browning and roast for an additional 5 minutes.
  5. Add Parmesan and Broil: Sprinkle the freshly grated Parmesan cheese evenly over the zucchini. Then move the baking sheet under the oven broiler set to low. Broil for 2 to 3 minutes until the cheese melts and turns golden brown. Watch closely to prevent burning.

Notes

  • Ensure parchment paper is rated for high temperatures or roast directly on the baking sheet to avoid burning paper.
  • Flipping zucchini halfway through baking helps achieve even texture and color.
  • Watch the zucchini closely during broiling since broilers vary in intensity and can cause burning quickly.
  • This dish pairs wonderfully with grilled meats or as a healthy vegetarian side.
