A quick and flavorful pan-fried white fish recipe using a simple spice rub of paprika, oregano, and garlic powder, cooked to a perfect golden crust and served with a fresh squeeze of lemon and optional parsley garnish. Ideal for a light and healthy meal ready in just 15 minutes.

Ingredients

Fish and Seasoning

  • 4 white fish fillets (such as tilapia, snapper, mahi mahi)
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Cooking

  • 2 tablespoons olive oil or neutral oil (30 ml)

Garnish

  • 1 fresh lemon
  • Fresh parsley (optional for garnish)

Instructions

  1. Pat dry fish fillets: Use paper towels to gently pat the tilapia or chosen white fish fillets dry, which helps the seasoning stick better and promotes a nice crust when cooking.
  2. Prepare spice mixture and rub: In a small bowl, combine paprika, dried oregano, garlic powder, salt, and black pepper. Rub this spice blend evenly over both sides of each fish fillet to coating thoroughly for maximum flavor.
  3. Heat oil in skillet: Place a large skillet over medium-high heat and add the olive or neutral oil. Heat until it begins to sizzle but is not smoking, indicating it's ready for frying.
  4. Cook fish fillets: Carefully add the fillets to the hot pan, arranging thicker parts towards the center and avoiding crowding. Cook for 3 minutes without moving them to develop a golden crust on the underside.
  5. Flip and finish cooking: Gently flip each fillet using a spatula and cook for another 3-4 minutes, until the fish changes from translucent to white and flakes easily when tested with a fork at its thickest part.
  6. Add lemon and garnish: Squeeze half a fresh lemon over the cooked fillets for bright acidity. Optionally garnish with chopped fresh parsley to add color and freshness.
  7. Serve immediately: Transfer the pan-fried fish to plates and serve while hot for the best taste and texture.

Notes

  • Do not overcrowd the pan; cook in batches if necessary to ensure even cooking and crispy crust.
  • Use a neutral oil if you prefer a milder taste; olive oil adds a nice flavor but has a lower smoke point.
  • Fresh parsley garnish is optional but adds a fresh herbal note and color contrast.
  • Ensure fish fillets are dry before seasoning to prevent steaming instead of frying.
