Peanut Butter & Jelly Pancake Poppers combine the fluffy goodness of pancakes with the nostalgic flavors of classic peanut butter and jelly sandwiches. These bite-sized treats are cooked in an aebelskiver pan for a fun, round shape, making them perfect for a playful breakfast, brunch, or even dessert.

Ingredients

Pancake Batter

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter or oil

Fillings

  • Creamy or crunchy peanut butter, about 1/2 to 3/4 teaspoon per popper
  • Grape, strawberry, raspberry, apricot, or mixed berry jelly or jam, about 1/2 teaspoon per popper

Additional

  • Oil or butter for greasing the pan
  • Powdered sugar (optional, for dusting)

Instructions

  1. Prepare your batter: If using boxed pancake mix, follow the package directions. For homemade batter, whisk together the dry ingredients—flour, baking powder, sugar, and salt—in one bowl. In another bowl, mix the wet ingredients—milk, egg, and melted butter or oil. Combine both mixtures and let it rest for 5 to 10 minutes to develop the batter’s texture.
  2. Heat your pan: Place an aebelskiver pan over medium-low heat. Lightly grease each well with oil or melted butter to prevent sticking and ensure even cooking.
  3. First batter pour: Pour about 1.5 to 2 tablespoons of batter into each pan well, filling it one-third to halfway full. Cook for 1 to 2 minutes until bubbles form on the surface and the edges begin to set.
  4. Add the fillings: Carefully place roughly 1/2 to 3/4 teaspoon of peanut butter into the center of each partially cooked pancake, followed by about 1/2 teaspoon of your chosen jelly or jam on top of the peanut butter.
  5. Seal the poppers: Pour a small amount of batter over the fillings to cover them completely, ensuring the poppers will encase the fillings securely during cooking.
  6. Cook and turn: Cook for an additional 2 to 3 minutes until golden brown on one side. Using skewers or chopsticks, turn each popper 90 degrees and continue rotating them carefully until they are evenly golden brown and fully rounded on all sides.
  7. Remove and repeat: Once cooked, carefully remove the poppers from the pan. Repeat the batter pour and filling process with the remaining ingredients until all poppers are made.
  8. Serve warm: Optionally dust the finished pancake poppers with powdered sugar and serve immediately for the best texture and flavor.

Notes

  • Use an aebelskiver pan for best shape and even cooking; a regular nonstick pan won’t create the same round shape.
  • You can choose creamy or crunchy peanut butter depending on your texture preference.
  • Experiment with different jam or jelly flavors to customize your poppers.
  • Make sure the pan is not too hot to avoid burning the pancakes before they cook through.
  • Serve immediately after cooking for best taste and texture as they soften upon standing.
