These Peanut Butter Chocolate No Bake Cookies are a quick and easy treat combining rich cocoa, creamy peanut butter, and hearty oats. Ready in just over half an hour without turning on the oven, they make a perfect snack or dessert that requires minimal effort and delivers maximum flavor.

Ingredients

Wet and Dry Ingredients

  • 1 cup white granulated sugar
  • 1 cup brown sugar
  • ½ cup salted butter
  • ½ cup milk
  • 4 tablespoons unsweetened cocoa powder
  • 1 tablespoon vanilla extract

Main Mix-Ins

  • 3 cups quick-cooking oats (can also use rolled oats, see notes)
  • 1 cup creamy peanut butter

Instructions

  1. Combine and Heat: In a medium saucepan, add white sugar, brown sugar, salted butter, milk, and unsweetened cocoa powder. Turn the heat to medium-high and whisk continuously while the butter melts to ensure even mixing.
  2. Boil and Time: When the mixture starts boiling across the surface, set a timer for one minute. Continue cooking without stirring during this time, then remove the saucepan from heat entirely after the minute elapses.
  3. Add Remaining Ingredients: Quickly add the creamy peanut butter, quick-cooking oats, and vanilla extract. Stir vigorously with a silicone spatula until all ingredients are well combined into a sticky cookie batter.
  4. Drop Cookies: Prepare two large sheets of parchment or wax paper on your countertop. Using a cookie scoop or two spoons, drop spoonfuls of the mixture onto the paper, spacing them to allow room for cooling.
  5. Cool and Set: Let the cookies cool at room temperature for at least 30 minutes until fully set and cool to the touch. Only then should you stack or store them in an airtight container to keep their texture.

Notes

  • For a chewier texture, rolled oats can be used instead of quick-cooking oats.
  • If you prefer a crunchier cookie, slightly reduce the quantity of oats.
  • Make sure cookies are completely cool before stacking to avoid sticking and sogginess.
  • You can substitute creamy peanut butter with natural peanut butter, but the consistency might vary.
  • Store cookies in an airtight container at room temperature for up to a week.
