A vibrant and flavorful Peanut Pasta Salad combining crunchy vegetables, tender rotini pasta, and a creamy, spicy peanut dressing. This quick and easy dish is perfect as a light lunch or a refreshing side, featuring a harmonious blend of textures and a hint of heat from chili crunch oil.

Ingredients

Salad

  • 4 cups cooked rotini pasta
  • 1 cup edamame
  • 1 bunch green onion, chopped
  • ¼ head red cabbage, shredded
  • 1 cup carrots, grated
  • 1 bunch cilantro, chopped
  • ⅓ cup peanuts, crushed

Dressing

  • 1 lime, juiced
  • ⅓ cup peanut butter, melted to be pourable
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 2-3 tbsp water (to thin as needed)
  • 1 tbsp chili crunch oil

Instructions

  1. Combine salad ingredients: In a large bowl, mix together the cooked rotini pasta, edamame, chopped green onion, shredded red cabbage, grated carrots, chopped cilantro, and crushed peanuts until well combined.
  2. Prepare the dressing: In a separate jar or small bowl, whisk together the melted peanut butter, freshly squeezed lime juice, soy sauce, sriracha, and 2 to 3 tablespoons of water until the dressing becomes smooth and pourable. Carefully spoon the chili crunch oil over the surface of the dressing to create a visually appealing 'melting lava' effect.
  3. Toss and serve: Pour the peanut dressing over the salad mixture and toss thoroughly to coat all ingredients evenly. For best flavor, chill the salad in a sealed container in the refrigerator for up to four days before serving.

Notes

  • Adjust the amount of sriracha and chili crunch oil depending on your preferred spice level.
  • For a nut-free version, substitute peanut butter and peanuts with sunflower seed butter and roasted seeds.
  • This salad can be served cold or at room temperature.
  • To keep the salad fresh longer, store the dressing separately and toss just before serving.
  • Adding a protein like grilled chicken or tofu can make this a more filling meal.
