Learn how to make perfectly creamy and fluffy scrambled eggs using a gentle stovetop method that prevents browning for restaurant-quality breakfast or brunch.

Ingredients

Scrambled Eggs Ingredients

  • 6 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon heavy cream or half-and-half
  • 1 teaspoon fresh chives, minced (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Whisk Eggs: Crack the eggs into a medium bowl. Add the heavy cream, salt, and pepper. Whisk gently until the yolks and whites are just combined, leaving some streaks of white for texture.
  2. Heat Skillet and Melt Butter: Place a non-stick skillet over medium-low heat. Add the butter and let it melt completely until it foams slightly, making sure it doesn’t brown.
  3. Pour and Set Eggs: Pour the egg mixture into the skillet. Let it sit undisturbed for about 30 seconds until the edges begin to set.
  4. Gently Push Eggs: Use a rubber spatula to gently push the cooked eggs from the edges toward the center, tilting the pan to let uncooked eggs flow underneath. Repeat slowly around the pan.
  5. Cook Slowly: Continue cooking over low heat, stirring and folding gently every few seconds to keep the eggs moving and prevent overcooking or browning.
  6. Finish Cooking: When eggs are mostly set but still slightly wet and glossy, remove from heat. Residual heat will complete the cooking.
  7. Add Chives and Serve: Stir in minced chives if using, and serve immediately on toast or a plate.

Notes

  • Do not over-whisk the eggs; slight streaks of white add texture.
  • Keep the heat low to avoid browning the butter or eggs.
  • Remove from heat when eggs are slightly wet to preserve creaminess.
  • Use a non-stick skillet for best results and easier folding.
  • Serve immediately for the best texture and flavor.
