Start your day with these creamy and nutritious Pistachio Cream Overnight Oats, blending rolled oats, chia seeds, Greek yogurt, and rich pistachio butter for a deliciously smooth and satisfying breakfast. Naturally sweetened with maple syrup and subtly flavored with vanilla and almond extracts, this make-ahead recipe is perfect for busy mornings and serves four.

Ingredients

Overnight Oats Mixture

  • 2 cups old-fashioned rolled oats
  • 2 tablespoons chia seeds
  • 1½ cups unsweetened almond milk
  • 1 cup plain Greek yogurt
  • 2 tablespoons pistachio butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • Pinch sea salt

Optional Toppings

  • ¼ cup chopped roasted pistachios
  • 2 tablespoons pistachio butter, warmed for drizzling
  • Fresh berries such as raspberries

Instructions

  1. Mix Ingredients: In a large bowl, whisk together the rolled oats, chia seeds, almond milk, Greek yogurt, pistachio butter, maple syrup, vanilla extract, almond extract, and sea salt until all ingredients are well combined and the mixture is smooth.
  2. Refrigerate Overnight: Transfer the oat mixture to a covered bowl or portion it evenly among four individual jars or containers. Seal tightly and refrigerate for at least 4 hours or preferably overnight, allowing the oats and chia seeds to absorb the liquid and soften.
  3. Prepare to Serve: Before serving, stir the oats well to combine. If the mixture is too thick, adjust the consistency by adding a splash of almond milk. Taste and sweeten further if desired.
  4. Add Toppings: Divide the oats into serving bowls or enjoy them directly from the jars. Garnish with chopped roasted pistachios, fresh berries like raspberries, and drizzle with warmed pistachio butter for extra richness.

Notes

  • For a dairy-free version, substitute Greek yogurt with coconut yogurt or any plant-based yogurt.
  • Maple syrup can be swapped with honey or agave syrup according to preference.
  • Allowing the oats to soak longer than 4 hours (up to 12 hours) improves texture and flavor integration.
  • Make sure to use old-fashioned rolled oats rather than instant oats for the best texture.
  • Warming the pistachio butter slightly makes it easier to drizzle over the oats.
