A simple and delicious Raspberry Glaze recipe perfect for drizzling over pastries, eclairs, donuts, or crullers. Made with fresh or frozen raspberries, icing sugar, and milk, this glaze offers a fresh fruity flavor with customizable consistency to suit your dessert needs. The quick blending and straining method ensures a smooth, seed-free glaze that's ready in minutes.

Ingredients

Raspberry Glaze Ingredients

  • ½ cup raspberries (fresh or frozen) (90g / ~3oz)
  • 1 ½ cups icing sugar (powdered sugar) (195g / ~7oz)
  • 2-3 teaspoons whole milk

Instructions

  1. Prepare Icing Sugar: Sift the icing sugar into a medium bowl and set it aside. This helps remove lumps and creates a smooth base for the glaze.
  2. Puree Raspberries: Blend the raspberries in a small food processor or blender until they become a smooth puree.
  3. Strain Puree: Press the raspberry puree through a fine strainer into the bowl of icing sugar to remove seeds, ensuring a silky smooth texture.
  4. Add Milk and Mix: Add half of the milk to the bowl and mix well to combine the ingredients evenly.
  5. Adjust Consistency: Gradually add the remaining milk a little at a time until you reach your desired glaze consistency. For a thick drizzle like on eclairs, aim for a consistency that takes 8-10 seconds to settle. For a thinner glaze suitable for crullers or donuts, make it thinner so it settles quickly.
  6. Storage and Use: Use the glaze immediately or cover the bowl tightly with plastic wrap for use the following day. If stored, gently heat and stir the glaze before using to loosen it up.
  7. Feedback: Please take a moment to leave a comment and rating, as it’s appreciated and helpful.

Notes

  • Use fresh or frozen raspberries depending on availability; both work equally well.
  • Adjust milk quantity carefully to achieve the desired glaze consistency.
  • The glaze can be stored in the refrigerator for up to one day; reheat gently before use.
  • Sifting the icing sugar is crucial to avoid lumps in the glaze.
  • Straining raspberry puree removes seeds for a smooth finish.
  • Great for topping pastries, eclairs, donuts, crullers, and cakes.
