These Red Velvet Meringues are light, airy cookies with a delicate cocoa flavor and a striking deep red color. Perfectly crisp on the outside and melt-in-your-mouth on the inside, they are ideal for festive occasions or as a sweet treat with tea or coffee. Made with simple ingredients and baked low and slow, these meringues require patience but yield beautifully textured, elegant cookies.

Ingredients

Ingredients

  • 3 egg whites, room temperature
  • 1/2 cup sugar
  • Dash of salt
  • 2 tsp unsweetened cocoa powder
  • 1/4 tsp lemon juice
  • Red food coloring (amount as desired)

Instructions

  1. Prep the Oven & Pan: Preheat your oven to 225°F (107°C). Line a flat, rimmed baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
  2. Combine the Dry Sugar Mixture: In a small bowl, whisk together the sugar, salt, and unsweetened cocoa powder thoroughly to evenly distribute the cocoa and salt in the sugar. Set this mixture aside for adding gradually to the egg whites.
  3. Whip the Egg Whites: In a clean mixing bowl, preferably with a whisk attachment, beat the room-temperature egg whites on medium speed until they become frothy. Add the lemon juice, which helps stabilize the meringue, and continue beating until soft peaks form—this means the egg whites hold gentle peaks that slightly bend over when the whisk is lifted.
  4. Add Sugar Gradually: Slowly add the sugar and cocoa powder mixture in small increments, about 1/8 cup at a time, to avoid deflating the egg whites. Continue beating after each addition until the mixture becomes glossy and stiff peaks develop, indicating the meringue is ready.
  5. Color the Meringue: Add red food coloring a bit at a time, whipping the mixture gently after each addition to achieve your desired deep red velvet shade. Be careful not to overmix, which can break down the meringue structure.
  6. Pipe & Decorate: Transfer the red velvet meringue mixture to a piping bag or use a spoon to dollop spoonfuls onto your prepared baking sheet. If desired, sprinkle with decorative coarse sugar or sprinkles before baking for added texture and appearance.
  7. Bake & Rest: Bake the meringues in the preheated oven for 1 hour. After baking, turn off the oven but leave the meringues inside to cool and dry for an additional hour without opening the oven door, ensuring they become perfectly crisp on the outside and tender inside.
  8. Cool & Serve: Remove the meringues from the oven after the resting period and allow them to reach room temperature if needed. They are now completely dry to the touch and ready to be enjoyed as a light, sweet treat.

Notes

  • Ensure egg whites are at room temperature for better volume when whipping.
  • Adding lemon juice or an acid helps stabilize egg whites and improve meringue texture.
  • Do not rush the drying process; the slow cooling inside the oven prevents cracking and helps achieve the ideal texture.
  • Be gentle when adding food coloring to maintain airiness in the meringue.
  • Store baked meringues in an airtight container to keep them crisp.
  • If you don’t have red food coloring, a mix of beet juice or natural coloring alternatives can be used but may affect texture slightly.
