Roasted Cabbage Steaks are a delicious and savory side dish where thick wedges of green cabbage are brushed with garlic butter, roasted until tender, and topped with a crispy, melted Parmesan crust. This simple yet flavorful recipe transforms humble cabbage into a satisfying, golden brown dish perfect for any meal.

Ingredients

Cabbage Steaks

  • 1 head green cabbage, medium size, cut into 8 wedges

Butter Mixture

  • 8 Tbsp unsalted butter, melted
  • Salt and freshly ground black pepper, to taste
  • 6 cloves garlic, minced

Topping

  • 1 cup Parmesan cheese, freshly grated
  • Chopped fresh parsley, optional, for garnish

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 375 degrees F and spray a 9×13-inch baking dish with cooking spray. Set aside.
  2. Prepare Butter Mixture: Melt the butter and stir in salt, freshly ground black pepper, and the minced garlic until thoroughly combined.
  3. Arrange Cabbage Wedges: Lay the cabbage wedges flat in the prepared baking dish, arranging them evenly to ensure even cooking.
  4. Apply First Butter Layer and Cheese: Brush half of the garlic butter mixture over the top sides of the cabbage wedges, then sprinkle half of the grated Parmesan cheese evenly over the buttered surface.
  5. Flip and Press Cheese: Using a spatula, carefully flip each wedge over. Press the Parmesan cheese into the undersides of the wedges so it adheres well.
  6. Apply Remaining Butter and Cheese: Brush the remaining garlic butter mixture over the newly exposed sides of the wedges. Sprinkle the remaining Parmesan cheese over the top and gently press it down with your fingers to stick.
  7. Bake Until Tender and Golden: Place the baking dish in the oven and roast the cabbage steaks for 40-45 minutes. Bake until the cheese is melted, edges of the cabbage are charred and lightly browned. If the edges brown too quickly, cover loosely with aluminum foil to prevent burning.
  8. Garnish and Serve: Remove from oven, sprinkle with chopped fresh parsley if desired, and serve warm as a flavorful side dish.

Notes

  • If the cabbage is really large, consider using two 9×13-inch pans to avoid overcrowding and ensure even roasting.
  • Best served fresh from the oven; leftovers can be stored in an airtight container in the refrigerator for 1-2 days.
  • Prep ahead by cutting cabbage wedges and grating cheese a day before storing separately in airtight containers.
  • Substitute Parmesan with other cheeses like mozzarella or Pecorino Romano, or add crunchy toppings such as chopped nuts, breadcrumbs, or crushed crackers.
  • For a spicy kick, mix melted butter with paprika, cayenne, or red pepper flakes before brushing on cabbage.
  • To make vegan, replace butter with olive oil or avocado oil.
  • Serve with creamy salad dressings, like Caesar dressing, drizzled over the wedges for extra richness.
  • Cut wedges uniformly for consistent cooking and a balanced presentation.
