Ingredients

Vegetables

  • 1.5 pounds baby potatoes, halved or quartered
  • 1 white onion, cut into small chunks

Seasonings & Oil

  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 425℉ (220℃). Line a large baking pan with parchment paper or grease with cooking spray to prevent sticking and set aside.
  2. Toss Vegetables with Seasonings: In a large mixing bowl, combine the halved or quartered baby potatoes and chopped white onion. Add olive oil, garlic powder, dried thyme, smoked paprika, salt, and black pepper. Gently toss everything together until all pieces are evenly coated with the seasoning mixture. Mixing in a bowl helps ensure even coating and minimizes mess.
  3. Arrange and Roast: Spread the seasoned potatoes and onions in an even layer on the prepared baking pan. Place in the preheated oven and roast for 30-35 minutes, stirring halfway through the cooking time. The potatoes should develop a crispy golden exterior while remaining tender inside.
  4. Serve: Once the potatoes and onions are fork-tender and crispy, remove from the oven and serve immediately as a delicious side dish.

Notes

  • Using baby potatoes ensures even roasting and a nice texture; if using larger potatoes, cutting them into smaller pieces helps.
  • Stirring halfway through cooking promotes even browning on all sides.
  • Adjust seasoning quantities according to taste preferences.
  • You can also add fresh herbs like rosemary or parsley for extra flavor.
  • Serving immediately helps maintain the crispiness of the potatoes.
