Ingredients

For the Saffron Risotto Cakes:

  • 1 cup Arborio rice (200g)
  • 2 cups chicken or vegetable stock, warm (480ml)
  • 1 pinch saffron threads
  • 1/2 cup onion, finely chopped (about 75g)
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (120ml)
  • 1/2 cup grated Parmesan cheese (50g)
  • 2 tbsp unsalted butter (30g)
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour (60g)
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (120g)
  • Olive oil, for frying

For the Lemon Aioli:

  • 1/2 cup mayonnaise (120ml)
  • 1 tbsp lemon juice (15ml)
  • 1 tsp lemon zest
  • 1 clove garlic, minced
  • Salt and pepper, to taste

For Garnish:

  • 1/2 cup microgreens

Instructions

  1. Sauté Aromatics: In a large pan over medium heat, melt the butter and sauté the finely chopped onion and minced garlic until translucent and fragrant, about 3-4 minutes.
  2. Toast Rice: Add the Arborio rice to the pan and cook, stirring constantly, for 2 minutes to lightly toast the grains and develop flavor.
  3. Deglaze with Wine: Pour in the dry white wine and simmer, stirring, until the wine is almost completely evaporated, about 2-3 minutes.
  4. Add Saffron and Stock Gradually: Sprinkle in the saffron threads, then add warm stock one ladle at a time, stirring continuously and allowing each addition to absorb before adding the next. This process should take around 18-20 minutes until the rice is creamy and al dente.
  5. Finish Risotto: Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste. Spread the risotto thinly on a tray and allow it to cool completely to firm up.
  6. Shape Cakes: Once cooled, take portions of the risotto and shape them into small, compact patties about 2-3 inches in diameter.
  7. Prepare Breading Stations: Set up three separate bowls: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs for coating.
  8. Bread Risotto Cakes: Dredge each risotto cake first in the flour, ensuring an even coat, then dip into the beaten eggs, and finally coat thoroughly with breadcrumbs.
  9. Fry Cakes: Heat olive oil in a frying pan over medium heat. Fry the breaded risotto cakes for 3-4 minutes per side or until golden brown and crispy. Remove and drain on paper towels to remove excess oil.
  10. Make Lemon Aioli: In a small bowl, whisk together mayonnaise, lemon juice, lemon zest, minced garlic, and season with salt and pepper until smooth and well combined.
  11. Serve: Plate the saffron risotto cakes, top each with a dollop of lemon aioli, and garnish generously with fresh microgreens for a bright and fresh finish.

Notes

  • Use vegetable stock instead of chicken stock for a vegetarian version of this recipe.
  • Ensure the risotto is completely cooled before shaping into cakes to help them hold together during frying.
  • Lemon aioli can be prepared in advance and refrigerated to allow flavors to meld beautifully before serving.
