Ingredients

Dry Ingredients

  • 1 ½ cups (190g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • 1 cup (240ml) buttermilk
  • 2 large eggs
  • 4 tablespoons (60g) unsalted butter, melted
  • 1 teaspoon pure vanilla extract

Mix-ins and Toppings

  • ½ cup (75g) mini chocolate chips
  • ½ cup (60g) fresh blueberries
  • ¼ cup (25g) chopped nuts
  • Maple syrup or honey for serving
  • Fresh fruit (strawberries, bananas, blueberries) for serving
  • Powdered sugar for dusting

Instructions

  1. Preheat oven and prepare dish. Preheat your oven to 350°F (175°C) and grease a baking dish to prevent sticking.
  2. Mix dry ingredients. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
  3. Combine wet ingredients. In a separate bowl, blend the buttermilk, eggs, melted unsalted butter, and pure vanilla extract until smooth and incorporated.
  4. Combine wet and dry mixtures. Pour the wet ingredients into the dry ingredients and stir gently until just combined; be careful not to overmix to keep the batter fluffy.
  5. Add mix-ins. Fold in your choice of mini chocolate chips, fresh blueberries, or chopped nuts to add flavor and texture.
  6. Fill and spread batter. Spoon the pancake batter evenly into the prepared baking dish, smoothing the top with a spatula.
  7. Bake the batter. Place the dish in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool and cut. Allow the baked pancake bites to cool slightly before cutting them into bite-sized pieces.
  9. Serve. Serve the pancake bites warm, drizzled with maple syrup or honey, accompanied by fresh fruit, and optionally dusted with powdered sugar.

Notes

  • Customize the mix-ins to your liking with your favorite fruits or nuts.
  • To store leftovers, keep them in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the microwave or oven before serving for best texture.
  • Use fresh buttermilk for the best flavor and fluffiness.
