Ingredients

Chicken and Butter

  • 4 medium chicken breasts
  • 1-2 tablespoons butter (salted or unsalted), cubed

Sauce

  • 1/4 cup reduced sodium chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons reduced sodium soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Make Sauce: Spray a large 6- to 7-quart slow cooker with cooking spray. In the slow cooker, add all the sauce ingredients including chicken broth, lemon juice, soy sauce, balsamic vinegar, brown sugar, Dijon mustard, olive oil, and the spices. Whisk everything together thoroughly to combine the flavors.
  2. Add Chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking and tenderize the meat slightly. Place the chicken breasts into the slow cooker, turning them in the sauce to coat well. Spoon some of the sauce liquid over the chicken breasts. Scatter the cubed butter evenly over the chicken for richness.
  3. Cook: Cover the slow cooker and cook on LOW for 2 to 4 hours, checking at 2 hours for doneness. Alternatively, cook on HIGH for 1 to 1½ hours. The chicken is done when it reaches an internal temperature of 160°F. Use a digital probe thermometer inserted in the thickest part of the chicken to monitor cooking precisely.
  4. Serve: Transfer the cooked chicken to a cutting board and allow it to rest for 5-10 minutes. This helps retain juices and makes slicing easier. Slice the chicken and serve with a drizzle of the slow-cooker sauce for added flavor. Season with additional salt and pepper to taste if needed.

Notes

  • For more intense flavor, marinate the chicken in the sauce for 1-2 hours before cooking.
  • Use a digital meat thermometer to avoid overcooking and maintain moist chicken breasts.
  • Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
  • This recipe pairs well with rice, mashed potatoes, or steamed vegetables.
  • If you prefer thicker sauce, remove the chicken after cooking and simmer the sauce on the stovetop for a few minutes until reduced.
