Ingredients

Broccoli

  • 3 cups broccoli florets (from about 2 small crowns; fresh or frozen)

Seasoning & Topping

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon zest
  • 1 teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon salt
  • ⅓ cup shredded parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Boil Water: Fill a large pot with a couple inches of water and bring it to a rolling boil to prepare for steaming the broccoli.
  3. Prepare Olive Oil Mixture: While waiting for the water to boil, whisk together the olive oil, lemon zest, garlic powder, black pepper, and salt in a measuring cup or bowl to create a flavorful dressing.
  4. Steam Broccoli: Place a steamer basket over the boiling water, add the broccoli florets, cover, and steam for 5 to 7 minutes until the broccoli is fork-tender but still holds its shape. For frozen broccoli, shorten the time and check earlier. Avoid overcooking to maintain texture.
  5. Brush Olive Oil on Parchment: Brush a layer of the olive oil mixture onto the prepared parchment paper to enhance flavor and prevent sticking.
  6. Smash Broccoli: Transfer the steamed broccoli onto the parchment in a single layer. Using the back of a glass, gently press each floret until it is flattened but still intact.
  7. Brush and Sprinkle: Brush the remaining olive oil mixture on top of the smashed florets and sprinkle evenly with shredded parmesan cheese.
  8. Bake: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes until the parmesan cheese becomes crispy and the broccoli edges turn nicely crisp while the centers stay tender.
  9. Serve: Remove from oven and serve warm as a delicious side dish that combines crispy texture with cheesy, zesty flavor.

Notes

  • Use fresh broccoli for the best crispy results; frozen broccoli can be used but may retain more water and require shorter cooking times.
  • Do not overcook the broccoli during steaming to prevent it from turning mushy; it should be fork-tender but still firm enough to smash.
  • You can cook the broccoli using other methods like microwaving or blanching if preferred, but steaming preserves the best texture.
  • Adjust seasoning quantities to suit your taste preferences, especially salt and garlic powder.
