A quick and flavorful Spicy Tuna Sushi Bowl combining tender tuna with a spicy mayo sauce, served over sushi rice with fresh cucumber, creamy avocado, and edamame, topped with sesame seeds and served with seasoned roasted seaweed for an easy and satisfying meal.

Ingredients

Spicy Tuna Mixture

  • 185 gram tin tuna in spring water, drained
  • 2 tablespoons kewpie mayonnaise
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha (plus extra to serve)
  • 1 teaspoon rice wine vinegar

Base and Toppings

  • 1½ cups cooked sushi rice
  • ½ cucumber, sliced
  • 1 avocado, sliced
  • 1 cup shelled edamame, cooked
  • 1 teaspoon sesame seeds
  • Seasoned roasted seaweed, to serve

Instructions

  1. Prepare the Spicy Tuna Mixture: In a medium bowl, combine the drained tuna, kewpie mayonnaise, soy sauce, sriracha, and rice wine vinegar. Stir gently until all ingredients are thoroughly mixed and the tuna is evenly coated with the spicy sauce.
  2. Prepare the Rice Base: Divide the cooked sushi rice evenly between two serving bowls, creating a base layer for the dish.
  3. Assemble the Bowl: Arrange sliced cucumber, sliced avocado, and cooked shelled edamame around the sushi rice in each bowl. Spoon the spicy tuna mixture generously over the top of the rice and vegetables.
  4. Garnish and Serve: Sprinkle each bowl with sesame seeds and drizzle additional sriracha over the top according to your spice preference. Serve immediately with seasoned roasted seaweed pieces on the side for scooping and added texture.

Notes

  • Use warmed sushi rice for the best texture and flavor experience.
  • Kewpie mayonnaise is preferred for its rich umami flavor but regular mayonnaise can substitute if necessary.
  • Adjust the amount of sriracha to your desired spice level.
  • Shelled edamame can be steamed or boiled according to package instructions before adding to the bowl.
  • Seasoned roasted seaweed adds a nice salty crunch and can be found at most grocery stores or Asian markets.
