Delicious and easy-to-make Steak Quesadillas featuring tender chipotle-seasoned steak, sautéed fajita vegetables, and melted jalapeno Jack cheese, all sandwiched between crispy tortillas. Perfect for a quick weeknight meal or casual gathering, served with flavorful sides like pico de gallo, roasted chili corn salsa, and chipotle ranch.

Ingredients

Main Ingredients

  • 4 10" tortillas (see notes)
  • 2 cups cubed Chipotle steak
  • 1 cup fajita veggies (such as sliced bell peppers and onions)
  • 4 cups grated jalapeno Jack cheese
  • 2 tbsp fresh cilantro, chopped

Optional Sides and Toppings

  • Pico de Gallo
  • Roasted Chili Corn Salsa
  • Chipotle Ranch Dressing

Instructions

  1. Preheat and Assemble: Preheat a griddle or multiple skillets over medium heat. Place one tortilla onto the cooking surface. Sprinkle a layer of grated jalapeno Jack cheese evenly over the tortilla. Add the cubed chipotle steak and fajita veggies evenly on top. Add another layer of cheese to help bind the filling, then top with a second tortilla.
  2. Cook the First Side: Cover the quesadilla while it cooks to help the cheese melt. Cook for 2-3 minutes until the bottom tortilla turns golden brown and the cheese begins to melt thoroughly.
  3. Flip and Finish Cooking: Carefully uncover and flip the quesadilla using a spatula. Cook for another 2-3 minutes, adjusting the heat as needed to prevent burning, until the second side is golden brown and the cheese is completely melted inside.
  4. Serve: Remove the quesadilla from the heat and transfer to a cutting board. Cut into wedges using a sharp knife or pizza cutter. Garnish with chopped fresh cilantro and serve immediately with pico de gallo, roasted chili corn salsa, and chipotle ranch for dipping.

Notes

  • Using 10" tortillas works best for evenly filling and folding the quesadillas.
  • For fajita veggies, traditional bell peppers and onions are recommended, but you can customize with your favorites.
  • If you prefer a smoky flavor, use chipotle seasoning on the steak or add chipotle ranch on the side.
  • Covering the quesadilla while cooking helps melt the cheese thoroughly and prevents uneven cooking.
  • Handle flipping carefully to avoid spilling the filling.
