Ingredients

Dough

  • 2¼ tsp. instant yeast (1 packet, 0.25 oz)
  • 3¾ cups all-purpose flour (spooned & leveled)
  • 1/4 cup granulated sugar
  • 1 tsp. fine salt
  • 1/3 cup unsalted butter (melted and slightly cooled, warm 90-100°F)
  • 1 cup whole milk (warmed to ~110°F)
  • 1 large egg + 1 large egg yolk (room temperature)

Filling

  • 1/2 cup unsalted butter (softened)
  • 2/3 cup light brown sugar (packed)
  • 1 Tbsp. ground cinnamon
  • 1/2-2/3 cup thick strawberry preserves
  • 1/2 cup fresh strawberries (very finely chopped, patted dry to remove excess moisture)

Glaze & Garnish

  • 1 cup powdered sugar
  • 1-2 Tbsp. milk
  • 1-2 Tbsp. strawberry preserves
  • 1/2 tsp. vanilla extract
  • Pinch of salt
  • Sliced or diced fresh strawberries (for garnish)

Instructions

  1. Mix dry ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, instant yeast, and fine salt thoroughly to prepare the dry base for the dough.
  2. Add wet ingredients: Add the warm whole milk, melted and slightly cooled butter, one whole egg, and one egg yolk to the dry ingredients. Mix a few times with a wooden spoon just until a soft dough forms, then knead for 8-10 minutes using your hands or a stand mixer with a dough hook until the dough is smooth and elastic.
  3. First rise: Place the dough in a lightly greased large bowl, cover it with plastic wrap and a warm kitchen towel, and let it rise in a warm place for about 1½ hours or until it has doubled in size.
  4. Roll out the dough: On a lightly floured surface, roll the dough into a rectangle measuring approximately 12 by 18 inches, preparing it for the filling.
  5. Add the filling: Spread the softened butter evenly over the rolled dough. Sprinkle the packed light brown sugar and ground cinnamon evenly over the butter, gently pressing with your fingertips to incorporate. Then spread a thin layer of strawberry preserves over the cinnamon sugar, followed by sprinkling the finely chopped fresh strawberries evenly on top.
  6. Roll and cut: Starting from the long edge, roll the dough tightly but gently into a log shape to prevent the filling from squeezing out. Using a sharp knife, cut the log into 12 equal rolls. Place the rolls into a greased 9x13-inch baking pan.
  7. Second rise: Cover the pan with plastic wrap and a kitchen towel again, and let the rolls rise for about 45 minutes or until they become puffy.
  8. Bake: Preheat the oven to 350°F (175°C). Bake the cinnamon rolls for 25-30 minutes or until they turn lightly golden brown. If they begin to brown too quickly, loosely tent with foil. The rolls are done when their internal temperature reaches 190-195°F.
  9. Make the glaze: In a small bowl, whisk together powdered sugar, milk, strawberry preserves, vanilla extract, and a pinch of salt until the mixture is smooth and pourable.
  10. Finish and serve: Spread the glaze generously over the warm cinnamon rolls and garnish with fresh sliced or diced strawberries. Serve warm for the best flavor experience.

Notes

  • Use room temperature ingredients for better dough texture and rising.
  • If your kitchen is cold, place the dough bowl in a slightly warm but switched-off oven for the rise.
  • Ensure fresh strawberries are patted dry to avoid excess moisture that could make the dough soggy.
  • For softer rolls, cover the pan tightly during the second rise and avoid drafts.
  • You can substitute whole milk with 2% milk if desired, but whole milk yields richer flavor.
  • Strawberry preserves can be adjusted to taste, add more for a stronger strawberry flavor.
  • Store leftover cinnamon rolls in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days; reheat before serving.
