This vibrant and easy-to-make Jello Poke Cake combines the fluffy texture of a white cake with flavorful strawberry jello soaked into its holes, topped with creamy whipped topping for a delightful, refreshing dessert perfect for parties and family gatherings.

Ingredients

Cake

  • 1 (15.25-ounce) box white cake mix plus ingredients required to prepare as per package instructions

Jello Mixture

  • 1 box (4-serving size) strawberry jello
  • 1 cup boiling water
  • 1 cup cold water

Topping

  • 8 ounces thawed whipped topping (1 tub Cool Whip or homemade whipped cream)

Instructions

  1. Prepare the Cake: Follow the instructions on the white cake mix box to prepare the batter and bake the cake as directed. Once baked, allow the cake to cool in the pan for at least 20 minutes to set properly.
  2. Make the Jello Mixture: Stir the strawberry jello powder into 1 cup of boiling water until fully dissolved. Then, add 1 cup of cold water and mix well to combine.
  3. Poke Holes in the Cake: Using a fork, poke holes in the cooled cake at half-inch intervals, pressing all the way down to the bottom to allow the jello to seep through and infuse the cake.
  4. Pour Jello Over Cake: Spoon the prepared jello mixture evenly over the cake, allowing it to fill the holes and soak into the cake layers.
  5. Chill the Cake: Place the cake in the refrigerator and chill for 2 to 3 hours or until the jello is fully set within the cake.
  6. Add the Whipped Topping: Before serving, spread the thawed whipped topping evenly over the top of the cake. Optionally, garnish with sliced strawberries or other fresh fruit for added flavor and presentation.

Notes

  • Allow the cake to cool sufficiently before poking holes, so it does not crumble.
  • Use a fork for evenly spaced holes to maximize jello absorption.
  • Chilling time is essential for the jello to set properly inside the cake.
  • For variation, try using different flavors of jello or topping with fresh fruit.
  • This cake is best served chilled and can be stored covered in the refrigerator for up to 2 days.
