Instructions

  1. Combine Main Ingredients: Add all the ingredients except the olive oil into a food processor bowl to prepare the base of the pesto.
  2. Pulse Until Chunky: Mix over high speed until the mixture is very finely chopped but still a little chunky and not completely smooth.
  3. Add Olive Oil: Pour in the olive oil and mix over low speed or pulse until the pesto is well-combined and smooth but still textured.
  4. Season: Taste and season the pesto with salt and pepper according to your preference.
  5. Serve: Enjoy your sun-dried tomato pesto immediately or store it for later use as a sauce, spread, or dip.

Notes

  • Using oil from the sun-dried tomato jar adds extra flavor and helps with blending.
  • Walnuts can be substituted with peeled almonds if preferred.
  • The chili flakes and lemon zest are optional but add a nice subtle heat and brightness.
  • This pesto is best consumed fresh but can be refrigerated in an airtight container for up to a week.
  • Use as a pasta sauce, sandwich spread, or dip to add a robust flavor to dishes.
