Sweet Chili Chicken Wraps are a quick and flavorful lunch option featuring tender chicken coated in a sticky-sweet chili sauce, wrapped together with fresh, crunchy vegetables inside warm tortillas. These wraps are customizable with optional cheese, avocado, and fresh herbs, making them perfect for a satisfying and tasty meal.

Ingredients

Protein

  • 2 cooked chicken breasts (grilled, baked, or shredded rotisserie)
  • ½ cup sweet chili sauce

Vegetables & Extras

  • 1 cup shredded lettuce
  • 1 cucumber, sliced thin
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • Optional: shredded cheese
  • Optional: avocado slices
  • Optional: fresh herbs (cilantro, mint, or basil)
  • Optional: a squeeze of lime

Other

  • 4 large tortillas (flour or whole wheat)
  • Olive oil
  • Salt & pepper

Instructions

  1. Prepare and cook chicken: Season the chicken breasts lightly with salt and pepper. Heat a skillet with olive oil over medium heat, then cook the chicken until golden and fully cooked to an internal temperature of 165°F (74°C). Once cooked, let the chicken rest for 5 minutes to retain its juices, then slice it thinly against the grain for tenderness.
  2. Coat chicken with sauce: In a bowl, toss the sliced chicken with the sweet chili sauce until it is evenly coated, ensuring every bite is flavorful.
  3. Prepare vegetables: Slice the cucumber and bell pepper into thin strips, and julienne the carrot. Keep the shredded lettuce ready for assembly.
  4. Warm tortillas: Heat the tortillas briefly in a dry pan or microwave for 10 to 15 seconds to make them more pliable and prevent cracking when rolled.
  5. Assemble the wraps: Lay out a warm tortilla and layer the sweet chili chicken, shredded lettuce, sliced cucumber, bell pepper, and carrot inside. Add any optional toppings such as shredded cheese, avocado slices, fresh herbs, or a squeeze of lime to enhance flavor.
  6. Wrap and serve: Fold in the sides of the tortilla and roll tightly to enclose the filling. Cut the wrap diagonally in half for easier handling and an attractive presentation. Serve immediately for best taste.

Notes

  • Using rotisserie chicken can save time and effort, making this meal even quicker to prepare.
  • Warming the tortillas before assembling prevents them from cracking or breaking when rolling.
  • If you prefer more heat, adjust the spice level by adding sriracha or chili flakes to taste.
