Ingredients

Pizza Base

  • 1 large thinly rolled out pizza dough

Peanut Sauce

  • 3 Tablespoons peanut butter (smooth or chunky)
  • 2 teaspoons rice vinegar
  • 2 teaspoons low-sodium soy sauce
  • 1 teaspoon olive oil
  • 1/2 teaspoon crushed red pepper flakes
  • 1 Tablespoon freshly grated ginger
  • 2 teaspoons honey
  • 1/2 teaspoon sesame oil
  • 2-3 Tablespoons water

Toppings

  • 1 heaping cup cooked, shredded chicken
  • 1/4 cup chopped red or green onion
  • 3 Tablespoons shredded carrot (moisture squeezed out)
  • 1 1/4 cups freshly shredded mozzarella cheese
  • 1/4 cup fresh chopped cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 475 degrees Fahrenheit to ensure it reaches the perfect temperature for baking the pizza evenly and getting a crispy crust.
  2. Prepare Peanut Sauce: In a food processor or blender, combine the peanut butter, rice vinegar, low-sodium soy sauce, olive oil, crushed red pepper flakes, freshly grated ginger, honey, and sesame oil. Add 2 to 3 tablespoons of water gradually to thin the mixture until it reaches a smooth, spreadable sauce consistency. Set aside once ready.
  3. Assemble the Pizza: Spread the prepared peanut sauce evenly over the surface of the rolled-out pizza dough, making sure to cover the entire base for maximum flavor.
  4. Add Toppings: Scatter the cooked, shredded chicken evenly over the peanut sauce. Then sprinkle chopped red or green onion, shredded carrot (with moisture squeezed out), and top everything with freshly shredded mozzarella cheese.
  5. Bake: Place the assembled pizza in the preheated oven and bake for 7 to 12 minutes. Bake until the crust is cooked through and crisp, and the cheese is melted and bubbly.
  6. Garnish and Serve: Remove the pizza from the oven and immediately garnish with fresh chopped cilantro before slicing and serving. Enjoy your flavorful Thai Chicken Pizza!

Notes

  • Ensure the carrot is well-drained by squeezing out excess moisture to prevent a soggy crust.
  • Adjust crushed red pepper flakes according to your spice tolerance.
  • For a gluten-free option, substitute pizza dough with a gluten-free crust.
  • If you prefer a vegan version, use vegan cheese and replace chicken with tofu or mushrooms.
  • Leftover peanut sauce can be used as a dip or salad dressing.
