This BEST Vegan Egg Salad is a creamy, protein-packed alternative to traditional egg salad, made with super firm tofu, vegan mayonnaise, and flavorful seasonings including turmeric and smoky paprika. Ready in just 10 minutes, it's perfect for sandwiches or as a light, satisfying snack that's just as delicious as the original.

Ingredients

Salad Base

  • ½ cup of vegan mayonnaise
  • 3 teaspoons of Dijon mustard
  • 1 to 2 teaspoons of lemon juice
  • ½ teaspoon of turmeric
  • ½ teaspoon of garlic powder
  • ½ teaspoon of paprika
  • Salt and pepper to taste
  • ½ teaspoon of Indian Black Salt (Kala Namak) (optional)

Main Ingredients

  • 1 block of super firm tofu, cut into tiny cubes
  • 2 celery stalks, finely diced
  • 1 dill pickle, finely chopped (optional)
  • 2 tablespoons of fresh dill, minced
  • 2 tablespoons of fresh chives, thinly sliced

Instructions

  1. Prepare the Dressing: In a large bowl, combine the vegan mayonnaise, Dijon mustard, lemon juice, turmeric, garlic powder, paprika, salt, pepper, and Indian Black Salt if using. Mix thoroughly until smooth. Allow this mixture to sit for 5 minutes to let the flavors meld together.
  2. Add the Tofu and Vegetables: Add the cubed super firm tofu, finely diced celery, chopped dill pickle (if using), minced fresh dill, and thinly sliced fresh chives to the bowl. Stir well to evenly combine all ingredients.
  3. Taste and Adjust: Sample the salad and adjust seasoning as needed by adding more mustard, salt, or pepper to suit your preference.
  4. Serve: Enjoy the vegan egg salad immediately at room temperature or chilled. For best flavor, let it marinate in the refrigerator for at least an hour before serving to allow the flavors to deepen.

Notes

  • Use a high-quality vegan mayonnaise to ensure a creamy texture and pleasant flavor.
  • For the most authentic egg-like flavor, include Kala Namak (Indian black salt), which is actually pink and imparts a sulfurous, eggy taste.
  • Feel free to adjust the seasoning and ingredients to your taste preference.
  • Allowing the salad to marinate for an hour or more enhances the depth of flavor.
