A refreshing and hearty Tortellini Caesar Salad featuring cheese tortellini, crisp romaine lettuce, juicy tomatoes, homemade or store-bought Caesar dressing, and crunchy homemade croutons. This easy-to-make salad is perfect for a quick lunch or light dinner and combines the comforting flavors of pasta with the classic Caesar salad ingredients.

Ingredients

Salad Ingredients

  • 9 oz cheese tortellini (frozen or refrigerated)
  • 4-6 cups chopped romaine lettuce
  • 1 tomato, chopped or diced
  • Fresh parmesan cheese for topping (optional)
  • 1/2-1 cup Caesar dressing (homemade or store-bought)

Croutons

  • 2 cups diced bread (stale French baguette and ciabatta recommended, approx. 2-3 oz)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Make the Croutons: Preheat your oven to 375°F (190°C). In a bowl, toss the diced bread cubes with olive oil, salt, and pepper, ensuring each piece is well coated. Spread the bread evenly on a parchment paper-lined baking sheet. Bake on the center rack for 12-16 minutes, checking occasionally until the croutons are golden brown and crisp. Remove from oven and let cool.
  2. Cook the Tortellini: While the croutons bake, bring a small to medium pot of water to a boil. Add the tortellini and cook according to package instructions—approximately 3 minutes for fresh and 4-5 minutes for frozen tortellini. Once cooked, drain the tortellini and rinse briefly with cold water to stop the cooking process and keep them from sticking. Set aside.
  3. Assemble the Salad: In a large bowl, combine the chopped romaine lettuce, cooked tortellini, diced tomato, and fresh parmesan cheese if using. Just before serving, drizzle with the desired amount of Caesar dressing and toss thoroughly to coat all ingredients evenly.
  4. Add Croutons and Serve: Top the salad with the homemade croutons for crunch and enjoy immediately for the best texture and flavor.

Notes

  • Using stale bread for the croutons is a great way to minimize waste.
  • You can customize the Caesar dressing by using a homemade recipe or a preferred store-bought version.
  • For a vegetarian version, ensure the Caesar dressing does not contain anchovies.
  • Parmesan cheese is optional but adds a nice savory touch.
  • Serve the salad immediately after tossing with dressing to prevent sogginess.
  • For extra flavor, consider adding a squeeze of lemon juice or some freshly cracked black pepper on top.
