Ingredients

Wet Ingredients

  • 2 large bananas
  • ⅓ cup sugar
  • ⅓ cup canola oil (melted vegan butter or coconut oil may also work)

Dry Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 ½ cups all-purpose flour

Add-ins

  • ⅓ cup crushed walnuts
  • ¼ cup old-fashioned oats

Instructions

  1. Preheat the oven: Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a muffin tin to prevent sticking.
  2. Mash the bananas: In a large bowl, mash the ripe bananas thoroughly using a fork or potato masher until smooth.
  3. Mix wet and dry ingredients: Add sugar, canola oil, baking powder, baking soda, cinnamon, salt, and flour to the mashed bananas. Gently mix everything together until just combined, being careful not to overmix to keep the muffins tender.
  4. Fold in walnuts and oats: Gently fold the crushed walnuts and old-fashioned oats into the batter to evenly distribute them.
  5. Fill muffin tin: Spoon the batter into the prepared muffin tin, filling each cup all the way to the top for nicely rounded muffins.
  6. Bake: Bake in the preheated oven for 10 to 15 minutes or until the muffins turn golden brown and a toothpick inserted in the center comes out clean.
  7. Cool and serve: Remove muffins from the oven and allow them to cool slightly before serving to enjoy the best texture and flavor.

Notes

  • Use the spoon-and-level method for flour: Fluff the flour in its bag, spoon it into the measuring cup, then level with the back of a knife. This prevents using too much flour that can make muffins dense and dry.
  • Choose super ripe bananas with plenty of brown spots to enhance sweetness and banana flavor in the muffins.
  • Do not overmix the batter; mix only until the dry ingredients are incorporated. A few small lumps are okay to avoid dense and rubbery texture.
