These Vegan Breakfast Sausage patties are flavorful, protein-packed, and perfectly spiced. Made with textured vegetable protein and seasoned with smoked paprika, fennel seeds, and a touch of maple syrup, they’re an excellent plant-based alternative to traditional breakfast sausages. Crispy on the outside and tender inside, they’re pan-fried to golden perfection for a hearty and satisfying start to your day.

Ingredients

Main Ingredients

  • 1 cup TVP (textured vegetable protein)
  • 1 cup warm vegetable broth
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground sage
  • 2 tablespoons soy sauce
  • 1 tablespoon kitchen bouquet (optional, see Notes)
  • 2 tablespoons neutral flavored oil (plus more for frying)
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon liquid smoke
  • 2 tablespoons ground flaxseeds
  • 2 tablespoons all-purpose flour
  • 3/4 cup panko breadcrumbs (or quick oats)

Instructions

  1. Rehydrate TVP: In a large bowl, combine 1 cup TVP with 1 cup warm vegetable broth. Let it soak and rehydrate for about 15 minutes until the TVP has absorbed all the broth and softened.
  2. Mix Ingredients: Add the fennel seeds, onion powder, garlic powder, smoked paprika, ground sage, soy sauce, kitchen bouquet (if using), 2 tablespoons neutral oil, maple syrup, liquid smoke, ground flaxseeds, all-purpose flour, and panko breadcrumbs (or quick oats) into the rehydrated TVP. Stir everything together thoroughly until well combined. If the mixture feels too wet to form patties, gradually add more breadcrumbs or oats as needed.
  3. Form Patties: Using your hands, shape the mixture into sausage-sized patties, ensuring they hold together firmly.
  4. Pan Fry Patties: Heat a few tablespoons of neutral oil in a non-stick or cast iron skillet over medium heat. Once hot, place the patties in the pan and cook for about 3-4 minutes on each side, or until each side is nicely browned and crispy.
  5. Serve or Store: Serve the patties immediately for best taste and texture. Alternatively, store them in the refrigerator for up to 4 days, or freeze for longer storage. To reheat, use an air fryer, microwave, or oven until warmed through.

Notes

  • Kitchen bouquet is optional but adds a deeper color and a hint of umami flavor to the patties.
  • If the mixture seems too loose and doesn’t hold together well, add more panko breadcrumbs or quick oats a little at a time.
  • These patties can be frozen for up to 1 month. Thaw before reheating.
  • Reheat using an air fryer for best texture, or microwave/oven if preferred.
