Ingredients

Pancake Bowls

  • 2 1/2 cups pancake mix
  • 15 tablespoons Clean Simple Eats Cake Batter Whey Protein Powder (or Vanilla Whey)
  • 5 tablespoons plain nonfat Greek yogurt
  • 1 1/2 teaspoons vanilla bean paste (optional)
  • 2 1/2 cups water
  • 1 tablespoon sprinkles

Topping

  • 200 g Cool Whip (40g per bowl)
  • 80 g sprinkles (16g per bowl)

Instructions

  1. Preheat and Prepare Bowls: Preheat your oven to 350°F (175°C). Arrange five oven-safe dishes on a sheet pan and lightly coat them with cooking spray. Using 2-cup glass meal prep bowls works well for this recipe.
  2. Mix Batter: To each bowl, add 1/2 cup pancake mix, 3 tablespoons protein powder, 1 tablespoon Greek yogurt, 1/2 cup water, and 1/4 teaspoon vanilla bean paste (if using). Stir the ingredients in each bowl until smooth and well combined to create your batter.
  3. Add Sprinkles to Batter: Divide the tablespoon of sprinkles evenly among the five bowls and gently fold them into the batter, giving a festive funfetti appearance.
  4. Bake: Place the baking sheet with bowls into the preheated oven and bake for 30 to 35 minutes or until the pancake bowls are set and cooked through in the center.
  5. Cool and Store: Remove the pancake bowls from the oven and allow them to cool completely at room temperature. Once cooled, cover the bowls and store them in the refrigerator until ready to serve.
  6. Reheat to Serve: When ready to enjoy, reheat each bowl in the microwave for 1 to 2 minutes. Add your favorite pancake toppings if desired.
  7. Optional Frosted Birthday Cake Topping: For a birthday cake-inspired treat, refrigerate the pancake bowls for at least 30 minutes after baking and cooling. Spread 40g of Cool Whip evenly over each bowl.
  8. Dip in Sprinkles: Flip each bowl upside down and gently dip the whipped topping into a shallow bowl of sprinkles until the top is coated with colorful funfetti sprinkles for an extra festive look and flavor.

Notes

  • The vanilla bean paste is optional but adds a nice depth of flavor to the batter.
  • Use oven-safe glass bowls or ramekins that hold about 2 cups for best results.
  • Allow the pancake bowls to cool completely before refrigerating to prevent sogginess.
  • Feel free to swap sprinkles for other mix-ins like chocolate chips or nuts according to preference.
  • Reheating time may vary depending on your microwave; heat until warmed through.
  • These pancake bowls make excellent grab-and-go breakfasts and can be stored in the fridge for up to 3 days.
