A refreshing and crunchy Waldorf Salad featuring a creamy lemon-honey dressing, candied walnuts, crisp celery, tart Granny Smith apples, juicy red grapes, and tender cooked chicken, tossed together and chilled for a perfect light meal or side dish.

Ingredients

Dressing

  • ⅓ cup mayonnaise
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white balsamic vinegar
  • ½ teaspoon lemon zest
  • 1 tablespoon fresh lemon juice (from 1 lemon)
  • 1 tablespoon honey
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper

Salad

  • 1 cup candied walnuts, store-bought or homemade
  • 8 ribs celery, diced (about 2 cups)
  • 2 Granny Smith apples, cored and chopped (about 2 cups)
  • 1 cup red grapes, halved
  • 2 cups cubed cooked chicken
  • ½ cup chopped fresh flat-leaf parsley

Instructions

  1. Make the dressing: In a large bowl, whisk together the mayonnaise, extra-virgin olive oil, white balsamic vinegar, lemon zest, fresh lemon juice, honey, sea salt, and freshly cracked black pepper until the mixture is smooth and well combined, forming a creamy dressing.
  2. Assemble the salad: Add the candied walnuts, diced celery, chopped Granny Smith apples, halved red grapes, cubed cooked chicken, and chopped fresh flat-leaf parsley to the bowl with the dressing. Toss gently but thoroughly to ensure every ingredient is evenly coated with the dressing.
  3. Chill the salad: Cover the bowl with plastic wrap or a lid and refrigerate the salad for about 30 minutes to allow the flavors to meld and the salad to become nicely chilled.
  4. Serve: After chilling, divide the Waldorf Salad evenly among 4 serving bowls and serve immediately for a crisp, flavorful dish.

Notes

  • You can use store-bought candied walnuts or make your own by tossing walnuts with a little sugar and toasting them in a pan.
  • For extra crunch, add some chopped celery leaves or substitute celery with a mix of celery and fennel.
  • This salad is best served chilled, so allow it to rest in the refrigerator for at least 30 minutes before serving.
  • Leftovers can be stored covered in the refrigerator for up to 1 day; however, apples may brown slightly over time.
