Ingredients

Olives

  • 1/2 cup whole green olives, pitted
  • 1/2 cup whole black olives, pitted
  • 1/4 cup olive oil
  • Flaky salt, to taste
  • Black pepper, to taste
  • Fresh thyme sprigs

Whipped Feta Dip

  • 8 oz. feta cheese, crumbled
  • 1/4 cup whipped cream cheese
  • 1/2 cup olive oil (remaining after olives)
  • 1 tablespoon water
  • 1 teaspoon lemon zest
  • Black pepper, to taste
  • 1 teaspoon honey

Instructions

  1. Preheat and Roast Olives: Preheat your oven to 400°F (200°C). In a baking dish, toss the green and black olives with 1/4 cup of olive oil, flaky salt, and black pepper. Place fresh thyme sprigs on top. Roast in the oven for 8-10 minutes until the olives are fragrant and slightly softened.
  2. Prepare Whipped Feta: While the olives roast, add crumbled feta cheese, whipped cream cheese, water, and the remaining 1/2 cup olive oil into a food processor. Blend until smooth, about 2-3 minutes. Add lemon zest, black pepper, and honey, then process again for 2 minutes to fully incorporate the flavors.
  3. Assemble and Serve: Transfer the whipped feta dip into a serving bowl. Spoon the roasted olives over the top and garnish with fresh herbs if desired. Serve immediately with crusty bread or vegetable sticks for dipping.

Notes

  • Use good quality olives for the best flavor experience.
  • You can adjust the amount of honey to your liking for a sweeter dip.
  • Try using fresh oregano along with thyme for added herbal aroma.
  • This dip is best served fresh but can be refrigerated for up to 2 days.
  • Warm the dip slightly before serving if it has become too firm from chilling.
